Product Application:
Freeze-drying is a low temperature dehydration process that
involves freezing the product, lowering pressure,removing of ice
(moisture) by sublimation, transitions of the substance from solid
state to vapor without passing through the intermediate liguid
phase. Freeze drying results in a high qualitative product because
the entire process is performed at low temperature and pressure by
applying vacuum, below triple point. The original shape of the
product is maintained and quality of the rehydrated product is
excellent.
The vacuum dryer is composed of a refrigeration system, a vacuum
system, a heating system, and an electrical instrument control
system. The main components are drying box, water trap (cold trap),
refrigeration unit, vacuum pump, heating/cooling device, etc.
Brief description of freeze-drying process:
(1) Pretreatment process
For different materials to be dried, the pretreatment methods are
different. According to the characteristics of raw materials,
corresponding processing methods are adopted
(2) Pre-freezing process
There are two methods of pre-freezing: vacuuming, self-evaporative
freezing and freezing with quick-freezing equipment.
(3) Sublimation drying
Sublimation drying is carried out in a vacuum device, so it is very
important to maintain a suitable vacuum during the sublimation
drying process.
(4) Post-treatment process
Vacuum freeze-dried food is generally porous and loose, with a
large surface area, easy to absorb moisture.
Advantages of Vacuum Freeze Drying Machine:
①Keep the food structure, nutritional components and flavor
substances basically unchanged, especially the highest retention
rate of physiologically active components, which is the main reason
why some functional foods use freeze-dried food as the base
material.
②The appearance is not dry and cracked, does not shrink, and
maintains the original shape and color of the food.
③The product has no surface hardening, and the tissue is porous and
spongy, so it has good rehydration performance, is convenient to
eat, and can be restored after soaking, which determines its status
in instant convenience foods.
④Light weight, storage-resistant, no special requirements on
ambient temperature, can be kept for about 2 years under normal
temperature conditions when it is protected from light and
vacuum-filled with nitrogen, and its storage and sales costs are
far lower than that of frozen food.
