Astaxanthin, also known as violerythrin or lobster red pigment, is
a terpenoid unsaturated compound belonging to the carotenoid
family. With a molecular formula of C₄₀H₅₂O₄, it is a highly
promising natural antioxidant that can effectively scavenge free
radicals in cells and exhibit strong antioxidant activity.
