long-chain end reduces the impact of hydroxystearic acid's polar
hydroxyl groups, enabling the hydrophobic end to extend fully at
the oil-water interface. This ensures W/O system stability and is
particularly effective for emulsifying paraffin oils and plant oil
triglycerides.
