Description:
Papain belongs to the thiol containing (- SH) peptide chain
endonuclease, which is a proteolytic enzyme with protease and
esterase activities. It is a white to light brown powder or liquid
with certain hygroscopicity when in powder form and has a hydrogen
sulfide odor. It has high thermal stability and heat resistance,
soluble in water and glycerol, and almost insoluble in organic
solvents such as ethanol. The aqueous solution is colorless to
light yellow, sometimes milky white.
