Alpha-cyclodextrin is composed of 6 α-D-pyranose units connected by
α-1,4-glycosidic bonds. It has a cavity structure with hydrophobic
interior and hydrophilic exterior. This structure enables it to
encapsulate various molecules, thereby exerting its thickening,
viscosity and bonding effects. In addition, alpha-cyclodextrin is
stable at room temperature and not easy to burn, but it needs to
avoid contact with strong oxidants to ensure safe use.
